Last Saturday was the latest meeting of my book club, The Rack Pack. We read Adventures in Solitude, by Grant Lawrence. Great book with lots of local history. Even more entertaining was that a couple of our friends play pretty heavily in the book. Very cool to read about them. The author is a CBC radio host, and headed up a band called The Smugglers. I was a fan back in the day. So even cooler to read the book! Our host for this meeting said there would be a special guest. Who could it be? Apparently Grant was unable to make the meeting but the lovely Soraya spent the night with us. She’s in the book, has known Grant for 20 years and was the first person to read the first draft of the book. So we’re enjoying some wine, cheese, bread and cupcakes, (Bonnie’s Birthday), chatting about the book, and there was a knock at the door. It was Grant!! Super secret surprise special guest! It was awesome to have him at the meeting. We got some insight on his inspiration for the book, (a book club!), news on what some of the characters are up to now and a few post-publication stories.
As I said it was also Bonnie’s birthday. Bonnie loves her some pink, so I made vanilla cupcakes with pink sprinkles. The butter cream was delicious. How do I get my cakes light and fluffy???? I think I may have over baked these slightly. I know I didn’t over mix them!2 1/2 cups all purpose flour 2 tsp baking powder 1/2 tsp baking soda 1/2 tsp salt 1/2 cup milk 1/2 cup vegetable oil 1 tsp vanilla 1/2 cup butter 1 cup sugar 3 large eggs Preheat oven to 350. Line muffin tin with papers (24). Whisk together flour, powder, soda and salt. Combine milk, oil, vanilla, in a bowl. In another medium bowl, with an electric mixer on medium speed, beat butter and sugar about 3 mins. Add eggs one at a time beating well after each addition. Reduce speed to low and add flour mixture alternately with the milk, beginning and ending with flour, beating until just blended. Fill liners two-thirds full. Bake 15-20 mins. Remove from tins and cool completely on wire rack.
