We’ve been in our new place for just over a month now. We’re feeling settled and now starting to make it our own. The obvious starting place is Ewan’s room, of course! Our wonderful friends, the Flintoff’s, took E for a sleepover on Friday night so we could get our paint on. (finally after delays due to colds….)
I wanted to send some treats for the Flintoff’s to enjoy once the toddlers were off the floor. There are some allergies in their house, so I customized my go to peanut butter cookie recipe to make it egg and almost dairy free. The almost part is the dairy in the chocolate in the mini peanut butter cups I added to the cookies. Oh yeah I did.Peanut Butter Cookies 1/2 cup butter (I used Earth Balance) 1/2 cup peanut butter (I added a bit more to make up for the Earth Balance, keeping the cookies moist) 1/2 cup white sugar 1/2 cup brown sugar 1 well beaten egg ( I used replacer) 1/2 tsp baking soda 1 1/2 cups flour 1/2-3/4 cup mini p.b cups or choc chips Cream butter and peanut butter. Add sugars and cream some more. Add egg, flour and soda. Roll into balls, press down slightly and bake at 350 for 10-15 mins. (These took close to the 15 mark)
The cookies turned out well. I’ve learned with the Earth Balance to add a little more. It just doesn’t provide the moistness that butter does.
Ewan’s room turned out great too. The colour we picked is ‘Seattle’. So much better than the nasty green that was on the walls before. I’m so happy with how it turned out. The room isn’t quite finished. We still have a few more things to go on the walls and would like to find a better light fixture. Here is a little preview.
